Carbon steel is an alloy made up of about 99% iron and 1% carbon. By contrast, cast iron often contains two to three times more carbon than carbon steel. This small difference in the carbon to iron ratio makes carbon steel stronger than cast iron, and yet pliable. It can be pressed into shapes to create pans, woks, and the like.
